Healthy Recipes Banana Cookies (3 ingredients or less, egg free, dairy free, salt free, vegan)

It's Monday!!! Can you see my sleepy face? You look like this on Monday morning as well?;)) 1 hour less sleep, really unfair!!!;(( I went to bed around 2am and got up around 9 this morning! As I was reading the news online, I found this article on Huffington Post:

 Do you know what the character is? It means Tea in Chinese;) test ya! you said you love tea, huh? Did you pass the test?;))

Actually China one time tried this policy, but the daylight time change caused a lot of chaoes and accidents. After few years of tries, the gov abandoned it. It was supposed to save energy, but it turned out costing more, including lives.

What can we do then? urhhhh....Occupy the policies;-))

Well, nothing makes us feel better than eating something yum yum and healthy, so that we all can continue to occupy....whatever you want! Let's occupy the bed first;))

Banana cookies with "Tea"

I used the rest of banana in my refrige to make this recipe-really simple and easy to do!!

Benefits-SIMPLE!! only two ingredients-banana and whole wheat flour! well, the third ingredient should be Your love!!

 
















 The really good part of banana is that this fruit is rich in minerals and Vitamins, such as Magnesium, Potassium, Manganese, Vitamin C and B6. Here's what Vitamin B6 can do for your body (info from University of Mariland Medical Center)

Vitamin B6, also called pyridoxine, is one of 8 B vitamins. All B vitamins help the body convert food (carbohydrates) into fuel (glucose), which is used to produce energy. These B vitamins, often referred to as B complex vitamins, also help the body metabolize fats and protein. B complex vitamins are needed for healthy skin, hair, eyes, and liver. They also help the nervous system function properly.
Not bad, huh? One thing needs to be cautious is that Banana is high in calories, which means you could potentially gain weight if eat too much...

Everything in moderation, nothing in excess! (Who said this? Benjamin Franklin, Lincoln, or a much older guy;))?

Tea pairing: green tea

Ingredients:
2 cup whole wheat flour
4 ripe bananas, pealed

Optional topping-Matcha yogurt Honey dipping
6 tbsp fat free plain Greek yogurt
1 tbsp honey
1/2 tsp matcha green tea

Instructions:
1. 4 ripe bananas, pealed (well, it might sound funny that I have to mention this. Here's the real story I learned. One time my sister bought me some local fruits-looks like cherry tomatoes, but tastes really really great. It's a very well known fruit and SuZhou has the best quality of this type of fruit. I ate the whole thing! My sister laughed so loud that she said, you supposed to peal off the skin!! Well, first of all, the skin tasted great! How was I be supposed to know it?;)). Mash it in a medium bowl.You can use hands, like I did. After done, your hands smell really goodie, I promise;)

2. Preheat the oven 350F
3. Add 2 cup whole wheat flour in and make the dough. It's a little bit sticky.
4. Spread some flour on a flat board. Use roller to make the dough a big pizza shape, roughly 1/4 inch thick. Cut it various shapes you like, star, heart, etc.
5. Line the baking tray with patchment paper and transfer all cookies to the baking tray. Bake for about 15-20 minutes, or until cooked.

You can eat it as is or with dipping, such as the Matcha Yogurt Honey dipping. You also can use the dipping sauce as topping;) That's what I did.

Here's how you make the Matcha Yogurt Honey Dipping sauce:

Mix yogurt, honey and matcha green tea powder in a small bowl until smooth! It tastes really great!! Then transfer all the dipping sauce to a plastic bag and squeez it to the corner. Cut the corner part or the tip, to creat a tiny tiny openning. Squeeze it on top of the cookies, like the way you write on paper. It's fun!! If mess up, just eat it;)) easy!
