Healthy Recipes Arugula Salad (vegan, saltl free, egg free, diary free, sugar free)



 I watched Meet the Fockers again and again last weekend. You gonna love the movie!! I know it sounds silly, but actually I watched multiple times, never sick of it!! 

Anyway, did you read the article "What your shoes say to guys". I never thought men would even pay attention to women's shoes. Here's a good one from the article:


Whole Wheat Banana Muffins (Stevia recipes)

Last weekend I wanted something light for this early spring, so I made this Arugula salad! so simple and so delicious and healthy!!

Benefits: I like the taste of arugula (nutrition fact is here), little bit spicy I think. Endive give a little bit bitter taste to the salad. Together with vinegar and pecan, this salad has good texture, taste and good for weight loss!!

Tea pairing-Green tea!!

Ingredient A
2 cups of Arugula leaves
5 red radish, cleaned  and thinly sliced
1/2 cup roasted pecan, cut in small pieces
1/2 tbsp olive oil
2 tbsp balsamic vinegar
black pepper to taste

Ingredient B
2 endive (each has multiple leaves, use as spoons)

Instructions:

1 Mix all ingredients A together in a medium bowl.
2. fill each endive leaf with the mixture of ingredients A. Place in a big plate.

This salad can be your snack food, pairing green tea, or as diner.
